2007 Cabernet Sauvignon:  This wine begins with classic Cabernet aromas—blackberries, cassis ,  ripe plum—with an undercurrent of sweet herbs and black licorice. On the palette, the wine is strong, but not overwhelming. The backbone of this wine, Old Vine Sagemoor Cabernet, frames this wine with elegance and finesse. The blending component, Klipsun Cabernet, provides structure and roundness. Two vineyard sources—each contributing their own trademark characteristics—while perfecting complimenting each other.  A dollop of Merlot (just 14% of the blend) releases hints of muddled tarragon, rosemary and thyme.

Oak Profile:  100% French, 60% new  Alcohol: 14.8%  Production:  150 cases       Price:  $30/bottle

2007 Syrah-Grenache Blend:  Once again, our Syrah strings together the varietal’s notes of meatiness, spiciness and floral components in harmonious balance. The 20% Grenache provides flavors of garrique (a French term for dried lavender) and raspberry freezer jam.  On the palette, this wine is voluminous and reminiscent of southern Rhone style wines.

Oak Profile:  100% French                  Alcohol: 14.8%    Production:  112 cases       Price:  $25/bottle

2007 Seven Hills Vineyard Merlot:  Our Merlot provides textbook varietal characteristics of bright bing cherries and bittersweet chocolate, while expressing Seven Hills Vineyard terroir. The vineyard is defined by aromas of muddled savory herbs and cherry cola.  At just 51 cases produced, this is our smallest production and our first vineyard designate wine. Seven Hills Vineyard is salmon safe certified—meaning any products used in the vineyard would not pose any threat to salmon from run-off water.  Because of its medium weight, our Merlot would compliment poultry, pork or fish dishes.

Oak Profile:  100% French, 50% new  Alcohol: 14.7%  Production:  51 cases         Price:  $28/bottle

2009 Evergreen Vineyard Riesling:  Inspired by Mosel Rieslings, Joe aimed to express clean, precise fruit of white peach and apricot, while finishing with crisp minerality. This is the perfect spring/summer time wine, served on its own or with spicy cuisine.

Alcohol: 11.8%     Production:  131 cases       Price:  $16/bottle  RS:  1.1% by volume

2006 was our first vintage and two wines were produced.

2006 Walla Walla Valley Syrah
Varietals: 90% Syrah and 10% Cabernet Sauvignon
Case production: 97 Cases
Vineyard Sources: Dwelley & Rizzutti Vineyards
Barrels: 100% French Oak—33% new oak

We describe this wine as having strong floral characteristics with slight spice & piney notes. This Syrah expresses elements of citrus blossoms, with floral notes and an undercurrent of earthy tones.

The wine has soft tannins and a nice round pert acid. The 10% cabernet sauvignon rounds out the flavor profile with some nice currant undertones.

Our Syrah will pair nicely with braised meats or smoky cheeses. The well balanced acid will balance out foods like pastas or salmon. The wine also stands well on its own and is a great wine to enjoy without food.

The 2006 Syrah is available for purchase at $25 per bottle and we offer a 10% case discount. To order, email tempuscellars@gmail.com.

2006 Red Wine
Varietals: 53% Cabernet Sauvignon, 30 Merlot, 17% Cabernet Franc
Case production: 167 Cases

Our Bordeaux blend is noted as having great finesse, with a soft structure. It’s a great ready to drink wine with soft tannins and an elegant balance. The acid is firm and bright.

The nose of this wine is quite aromatic – with strong floral, violet notes. On the palette, the wine will provide cranberry and molasses flavors.

The 2006 Red Wine is available for purchase at $28 per bottle and we offer a 10% case discount. To order, email tempuscellars@gmail.com.

For those interested in cellaring our 2006 vintage, we recommend a cellaring these wines for approximately 3 years.
